March Recap: 8 wonderful things I did this month
Today is the first day of Spring and I’m so excited! The weather is finally starting to warm up even though there was a snow storm last week. Everyone is ready to get outside after a long winter. March was a lovely month for me. It was a transitional month so I had a lot of things to do. Today I’m going to be sharing all of the incredible things that I did this month! Hopefully it will inspire you too.
I started stretching for the splits every day.
In 2020 during lockdown I decided that I wanted to learn how to do the splits. I started stretching all the time and I saw a lot of major improvements. I got pretty close to doing the front splits so I was satisfied. Summer came and I definitely fell out of my stretching routine.
Before I knew it I was back where I was before, stiff and not flexible at all. It took me a while to get back into it but for March I decided that I was going to get serious about it.
I found this app that I use as my timer and I created a stretching circuit to go along with the timer. I love that it pushes me to my limit every day. Stretching for the splits can be difficult and painful, but it is definitely worth it in my opinion. I am already seeing results
I started chapter 32:
March is my birthday month! I turned 32 on March 3rd! I had a very lowkey birthday but it was a lot of fun nonetheless

I have been all over the web searching for new recipes and ideas for breakfast, lunch, dinner, and dessert. I came across a mini pancake dessert on tik tok and I knew I had to give it a try. If you want to try this dessert, you will find the details below the photo!
- 28 mini pancakes
- 2 scoops vanilla bean ice cream
- hot fudge topping
- 2 warm chocolate chip cookies
- powdered sugar
I love trying new recipes with the kids. They are getting older now so I am able to try different kinds of desserts with them and they actually appreciate it.
Next up is my Avocado toast that I am absolutely obsessed with!
I’m doing my best to slowly start incorporating more healthy things into my diet. Doing a cold turkey diet switch just isn’t for me. I’ve been introducing new healthy recipes little by little to make sure that I really like them. I’m currently addicted to avocado toast. It is so good! Here’s how I make mine.
- 2 slices of white or wheat bread
- 1 ripe avocado
- sea salt
- 1 large egg scrambled
- 1 piece of bacon
This is a very simple breakfast that is much healthier than my previous go-to breakfast of choice (pancakes). I hope you give it a try. The flower is a pansy. I was able to find them at Lowe’s yesterday. I was surprised because it is barely spring at this point. But I love putting flowers on my food! It makes it so much prettier.
I also made a chocolate bomb. It took me 2 tries but It looked really pretty when I got it right!
I watched a lot of great TV
I don’t know about you but there was a major dry spell on what seemed like all of the streaming services from December to February. For months I had nothing to watch and it was still the dead of winter.
I filled my time with books and French lessons, but I’m glad that all of my shows are coming back. Here’s what I watched this month.

I started making a menu for all of the delicious meals I cook
I tried making a menu years ago. I am a visual person who is always taking photos of my food, so I figured why not. I ended up not keeping up with it and also being unsatisfied with the photos because they looked too plain.
I have been learning to present and plate my food better little by little so I am much happier with how the photos are turning out. Eventually I will have a large menu that I can put in my recipe binder. (I’ll give more details on the binder later).
This photo is just an example of the layout. The completed menu will be organized by breakfast, lunch, and dinner. There will also be recipes and photos of desserts, snacks, and appetizers.
I want it to be just like a restaurant. I am creating the recipe binder to give to my kids when they move out. I still have plenty of time left but I want to make sure that it looks amazing and something they can use forever.
I finished a painting that I started a long time ago
I found the inspiration for this painting on Pinterest and I decided that I wanted to give it a try. I painted it in my sketchbook as a test run last year and decided that I was going to make one on canvas. I love the way it looks and I can’t wait to hang it in the house!
